GFCF Chicken Pot pie



This rainy colder weather makes me really want some warm comfort food....I remember my grandmother always made those for me...Yummy....the crust combo was soooo good.  Although hers were homemade, I am definitely okay with semi-homemade. So if you are a fan of Marie Calendars pie crust like I am, you will understand my hurt feelings when I had to give them up for the sake of this diet. But never fear, I have a recipe for a M.C. like crust that you CANNOT even tell its GFCF.  Well, here is my GFCF chicken pot pie that will make you slap somebody!!!! LOL!  Let me know what you think? Guess what?....your kids will love this for dinner......

Chicken Filling (Semi-homemade for faster time)

What you will need:

2 tbs of Vegan Earths Balance
1 med chopped yellow onion
1 bag of Frozen organic mixed veggies (For truly homemade: Use fresh veggies: celery, carrots & peas)
1 8oz container of sliced mushrooms
1 1/2 cups of cooked chicken
1 3/4 Gluten free Chicken broth
1 tsp of Season all
1/2 tsp of dried thyme or 1tsp of fresh thyme
3/4 cups of nondairy creamer
3 tbs of GF all purpose flour mix

Directions

1. In a 3 qt saucepan, melt the butter over medium heat.
2. Saute onion and mushrooms until brown and tender.
3. Stir in veggies, cooked chicken, chicken broth, salt and thyme.
4. Heat to boiling.
5. In a small bowl, mix 3/4 cups of milk and GF all purpose flour with whisk until smooth
6. Combine into Chicken filling, stirring until blended.
7. Heat to boiling.
8. Reduce to a simmer. Set aside. Time to make your Crust.


The Flaky Crust
(Make after the filling-if it sits, it will dry out and become harder to work with)

\What you will need:

1 1/2 cup Sweet Rice Flour
3/4 Brown Rice Flour
1/4 cup + 1Tbs Potato Starch
1 Tsp Salt
1/4 Xantham Gum
14 Tbs room temp Vegan Earth Balance Butter (1 3/4 Stick)
2 Large Eggs, 1/4 cup of cold water
1 tsp of Extra Virgin Olive oil


Directions:

1. Combine all the dry pie crust ingredients in the food processor
2. Add the room temp butter. Pulsate your machine to cut in the butter.  Butter should become small pea like pieces.
3. Add Eggs and water. Process until it becomes thick dough. Should become soft and malliable. Add up to 1 additional Tbs of cold water if needed.
4. Lightly dust the exterior dough with Sweet Rice flour, Roll dough out on a sheet of parchment paper. (Dusting the exterior of the dough prevents the dough from sticking to the paper. )
5. Light oil a pie plate with the Extra Virgin Olive oil
6. Lay half of the dough onto the pie plate. Brush with egg wash
(Egg Wash: 1 egg +1 tbs water whisked together)
7. Pour in chicken pie filling
8. Lay second half of the dough on top of the pie filling.
9. With a wet knife lightly cut slits into the top of dough.

Bake at 375 for 60 mins.
